Mexican Cornbread

MEXICAN CORN BREAD

1 C. cornmeal
1/2 tsp. baking soda
1 C. milk
2 eggs
3/4 tsp. salt
1 can creamed corn
1/2 T. bacon drippings
1 lb. ground beef
1 C. grated cheddar cheese
1 onion, chopped
3 jalapeño peppers, chopped

Combine cornmeal, milk, eggs, salt, soda, bacon drippings, and corn. Mix well and set aside. Brown meat and drain. Pour 1/2 of batter into greased 10-inch cast iron skillet. Top batter with meat and cheese. Sprinkle chopped peppers and onions over this and top with remaining batter. Bake at 350 degrees for about 50 minutes.

Sorry about leaving out the meat, it takes 1 pound ground beef. Hope you try it, it’s really good. Recipe has been updated.
