Mexican pork loin

This is a great filler for tacos or enchiladas.You can shred or cut into cubes after it’s finished cooking and has cooled off enough to handle.

3 lbs. lean pork loin.
1 tbs. granulated garlic
1 tbs. black pepper
1/2 - 1 tbs. salt
1 tsp. powdered coriander
1 tsp. powdered cumin
1 tsp. dry oregano
Large pan and enough water to cover loin topping it 3-4 inches.

Put seasonings in water and stir well to mix. Let loin marinate in seasoned water if you like for a couple of hours in frige. Boil loin until finished cooking
(45 minutes to little over an hour). Just depends on how hard you boil it.
After it’s finished cooking, let it cool and either shred or cut into cubes. This is a great enchilada or taco filling, or by itself with some refried beans, rice and tortillas on the side.
