Mexican Style Meatloaf

For the meatloaf

2 lb lean ground beef
1 egg
1/2 sleeve of saltine crackers crushed
1 cup of salsa
salt and pepper to taste
1/4 lb pepper jack cheese, thick sliced

Mix together all ingredients except cheese. In a loaf pan put half of hte meat mixture, add the cheese in a even layer, add the rest of the meat mixture. Make sure the meatloaf is well packed. Turn out the meat loaf onto a baking sheet. Bake at 350 about an hour or until done.
