This is nothing new… just a good way to use leftovers which for us would be the ground beef, mashed potatoes, peas, and corn cut off the cob.
1lb ground beef
4 cups mashed potatoes
1/2 cup peas
1/2 cup green beans
1/2 cup corn
2 cans (10.75oz) cream of potato
- Brown the beef and preheat the oven to 375 degrees
- Combine the peas, green beans, corn, and cream of potato in a mixing bowl
- In a greased 13x9 baking dish, smooth out the vegetable mixture followed by the beef.
- Cover with the mashed potatoes and bake for about 20 minutes or until it is heated through and the mashed potatoes begin to brown.
I like mine with some ketchup.
