12 round Girl Scout mint cookies or Grasshopper cookies
2 (8-oz.) pkgs. cream cheese, soften
1/2 cup sugar
2 tsp. mint flavoring
3 drops green food coloring
Preheat oven to 325 Degrees F. Line each muffin tin with paper liners. Place one cookie in each liner. In a small bowl, mix cream cheese, mint flavoring and sugar at medium speed until well blended. Add eggs and food coloring; mix well. Pour over cookies, filling 3/4 full. Bake 25 minutes. Remove from pan when cool.
