Mini Roasters on the Half Shell
1/2 cup sour cream 1/4 cup milk
2 tablespoons finely chopped green onion
4 teaspoons prepared horseradish
2 teaspoons lemon juice
10 Petite Gourmet Potatoes
Preheat oven to 375 degrees F. Roast potatoes 35 to 40 minutes or until tender. Remove from oven; cool slightly. Preheat broiler.
Cut 8 of the potatoes lengthwise in half. Using a teaspoon, scoop out center of potatoes to make shells, leaving a 1/4-inch rim. Place potato centers in medium bowl. Peel remaining potatoes; add to bowl. Mash potatoes with potato masher or beat with electric hand mixer. Add remaining ingredients; mix well.
Arrange potato shells on shallow baking pan. Top each with 1 tablespoon potato mixture. Broil, 3 to 4 inches from heat, for 5 minutes or until tops are lightly browned.
