This is a very good and tasty recipe for spring dishes and it is excellent with lamb and pork. I found this recipe in a cookbook some time ago I really don’t know which one, it called for mint jelly instead of fresh or dried mint. I found that the dried mint makes this dish more tasty.
2 10oz. packages green baby peas
5 fresh green spring onions chopped (use the green top to)
1 teaspoon lemon juice
4 Tablespoons water
2 Tablespoons margarine
1 Tablespoon sugar or Splenda
2 Tablespoons dried mint crushed (use more if fresh)
Sauté onions in the margarine until transparent. Add the green peas, water and lemon juice and cook until just tender. Add the mint the last five minutes of cooking time.
