Miss Olivia’s Table Taco Salad
For the meat mixture:
3 pounds 85% lean ground beef
5 packages commercial taco seasoning
2 cups water
2 cans black beans, lightly rinsed & drained
2 cans chili hot beans, neither rinsed nor drained
Cook ground beef until no pink shows. Add taco seasoning; stir until well
blended. Add water and stir thoroughly. Bring to gentle bubble, reduce heat
to low; cover and allow to cook 20 to 30 minutes. Stir in beans and continue
to cook until well heated.
For the sides: Ice burg lettuce Diced red onion Diced tomatoes Shredded
Mexican cheese blend Sour cream Guacamole Jalapeño slices Additional sides
of your choice
To serve: Spoon meat mixture into a slow cooker set on low heat. Provide
sides in separate serving dishes. Provide corn chops, nachos or your
favorite chip in baskets at tables.
Serves a medium to large crowd.
