Mixed Fruit Shortcakes

MIXED FRUIT SHORTCAKES
SERVES 2

1 c. mixed fresh berries
½ c. sliced fresh peaches or nectarines
4 t. sugar, divided
½ c. flour
¾ t. baking powder
1/8 t. salt
2 T. shortening
3 T. milk
Whipped cream

Combine berries and peaches with 2 t. sugar; set aside. Combine dry ingredients; cut in shortening until crumbly. Stir in milk just until moistened. Drop by 1/3 cupfuls 2-inches apart onto ungreased sheet. Flatten into 2 ½-inch circles. Sprinkle with remaining sugar. Bake at 425* F. 10 to 12 minutes or until golden brown. Cool on rack. Split in half horizontally; fill; garnish with whipped cream.
