Mixed Greens Salad with Sunflower Seed Dressing

MIXED GREENS: (all organic, of course!) Romaine, spinach, arugula, dandelion leaves, red romaine, butter crisp…any of your favorite greens!

Place in large bowl and add some diced celery, freshly chopped parsley, finely minced green onions (tops and all) and 3 TBSP walnuts (for the Omega 3 benefit!). Again, you may add other veggies like grape tomatoes or fresh, sliced 'shrooms, green pepper slices…let your imagination soar :stuck_out_tongue:

DRESSING:

4 TBSP Fresh lemon juice
2 TBSP cold-pressed Extra Virgin Olive Oil
a bit of water if necessary
1/2 tsp Italian herbs
1 tsp. prepared or Dijon Mustard
dash of garlic powder
dash of onion powder
1/4 c sunflower seeds
1/2 tsp cracked black pepper
salt to taste (I use Redmond Real Salt with minerals from www.Redmondrealsalt.com

Blend all in a blender, adding more of anything you wish. Add a bit more oil through the hole in the top of the blender, if necessary. A mixture of Olive and Walnut oils are wonderful in this dressing.

This can be served on a bed of tuna or canned chicken for added protein. My family likes this salad served on a bed of steamed brown rice/wild rice mixture, eaten cold. Nice change for a summer salad.
