[ul]Mocha Chocolate Cheesecake - No Bake
2 1/4 cup graham wafer crumbs
2 cups semi-sweet chocolate chips
2/3 cup melted butter, cool to room temperature
1/2 cup milk
4 tsp instant coffee
1 envelope unflavored gelatine
2 - 8 oz pkgs softened cream cheese
14 oz can of condensed milk
2 cups heavy cream, whipped
Combine graham crumbs, 1 cup chocolate chips and butter - mix well.
Pat into 9 inch pan, covering bottom and 2 1/2 inches up sides - set aside.
Combine milk, coffee, in saucepan - sprinkle gelatin on top.
Set aside for one minute, then cook over low heat, constantly stirring until gelatin and coffee dissolve.
Set aside cooled to room temperature.
Beat cream cheese and coffee mixture until creamy, in a bowl.
Fold in whipped cream and pour into prepared pan.
Melt 1 cup of semi-sweet chocolate chips, add a little water if too thick,
and drizzle over cake.
Makes one 9 inch cheescake.
