Mock Lobster

3 quarts boiling water
1 Tbsp pickling spice (tied in a cheesecloth bag)
2 bay leaves
1/4 cup butter (no substitutes)
1/4 cup vinegar
1 lb haddock fillets (halibut, or similar fish)
Paprika

Into the boiling water, add spice bag and reduce heat to medium. Add fillets and cook, uncovered, until fish turns white (approx 2-3 minutes). Remove from heat immediately. Place fillets on a broiler rack; brush with melted butter and sprinkle with paprika (not too heavily). Broil three inchesfrom broiler unit for 7-8 minutes. Do not turn. Serve with lemon and drawn butter.
