Mojo Criollo

1 large onion, thinly sliced or chopped
7 heaping Tbsp. minced garlic (or 18-24 cloves fresh garlic, pressed or minced)
2 tsp. salt
1-1/2 c. sour orange juice (or 1 c. orange juice and 1/4 c. each lime and lemon juices)
1-1/2 c. olive oil

Combine onion, garlic, salt and juice and let mixture sit at room temperature for at least 30 minutes. Heat olive oil over medium-high heat until very hot. Add mixture and stir. Cook until onions are at desired doneness.
