Molasses Cookies

Molasses Cookies

Makes 3 dozen.


1/2 cup butter
1/2 cup shortening (not margarine)
1 1/2 cups of sugar
1/2 cup molasses
2 eggs slightly beaten
4 cups Farmhouse Pancake & Waffle Mix (or your favorite brand)
1/2 teaspoon of salt
1 teaspoon of baking soda
2 1/4 teaspoons ground ginger
1 1/2 teaspoons ground cloves
1 1/2 teaspoons ground cinnamon

  1. In a large bowl cream together butter, shortening and sugar. Beat in molasses and eggs. Set aside.

  2. In another bowl, combine Pancake and Waffle Mix, salt, baking soda, ginger, cloves and cinnamon.

  3. Gradually mix flour mixture with creamed ingredients until the dough is smooth.

  4. Spoon onto a greased cookie sheet. Bake at 350 degrees F for about 11 minutes. Do not over bake. Cool on a wire rack.

Recipe Tips: Store in airtight container to maintain softness

4 c. sifted flour
2 t. baking soda
1 1/2 t. ground ginger
1/2 t. ground cinnamon
1/8 t. salt
1 1/2 c. molasses
1/2 c. shortening, melted
1/4 c. butter or margarine, melted
1/3 c. boiling water

In med. bowl, combine flour, baking soda, spices & salt. In large bowl,
mix molasses, shortening, butter & water. Add flour mixture to
molasses mixture, blend well. Cover, refrigerate until firm, about 2
Roll out dough 1/4" thick on well floured surface. Cut out using 3 1/2"
cookie cutters, sprinkle with sugar. Place 2" apart on ungreased cookie
Bake in preheated 375 F. oven about 12 mins. Remove to wire racks to cool. Makes about 3 dozen.
