Mom's Chicken & Rice

Here’s one of my favourite recipes. I really enjoy preparing it - it smells great when it’s cooking!!

Here are the ingredients you need to make Mom’s Chicken & Rice;

4 chicken breast halves (you can cut them in 2 if you want- they’ll cook faster that way)
2 cans of cream of mushroom soup
2 cans of milk (use the empty cream of mushroom soup cans
2 packages of dry onion soup mix
1 cup of sour cream (250 ml container)
1 1/2 tsp. lemon juice
1/2 tsp. dill seed
2-3 cups of instant rice

Place your chicken in a slightly greased 13 x 9" baking dish and sprinkle with salt & pepper.
Mix all other ingredients - EXCEPT instant rice - in a large mixing bowl, then pour over chicken in baking dish.
Bake @ 350 F for 1 1/2 - 2 hours (try not to let it get too dark on top)
When your Mom’s Chicken & Rice is almost finished, cook your instant rice in a large pot (measure almost 1 cup of water for every 1 cup of rice - it will make the rice fluffier) and follow cooking times according to the directions on the box.

On each plate, place one or two pieces of chicken and a scoop of rice, place a large spoonful (ladel) of sauce over the rice and serve!
