Manicotti-Mom’s
4 eggs and a dash of salt
1/2 cup water
1 1/4 cups flour
Add eggs to water, beat slightly with whisk. Add flour and beat. Add another 1/2 cup water. Beat until smooth.
Lightly grease small fry pan with oleo. Put a little batter in center and tilt to cover the bottom of the pan. Cook one side, slide onto waxed paper.
Fill the cooked side
Filling
1 1/2 lbs ricotta
1 egg, If think add a 2nd egg
8 ozs.cubed mozzarella
salt
grated parmesan
chopped parsley
