Monterey Jack Chicken

4 boneless, skinless chicken breasts
3 eggs
1 cup seasoned bread crumbs
1/2 cup butter
1 (8 ounce) package fresh mushrooms, sliced
1 (16 ounce) package shredded Monterey Jack cheese
1/2 cup chicken broth

Cut chicken into smaller pieces. Soak in beaten eggs at least 1 hour Coat with bread crumbs; brown in butter in skillet over medium heat. Layer in casserole dish in this order: chicken, mushrooms, cheese, chicken broth. Bake at 350F, 45 minutes. Serves 4.
