2 cups dry rice
2 cups sour cream
2 (6oz) cans Ortago diced green chilies
10 oz. Monterey Jack cheese grated
Fresh Parmesan cheese grated
Cook the rice according to pkg. directions. When rice is finished cooking and still hot, add sour cream, chilies and Monterey Jack cheese. Lightly spray a 2 quart casserole baking dish with Pam. Put rice in baking dish, cover and bake at 375 degrees for 25 minutes. Remove cover and sprinkle top with fresh grated Parmesan cheese. Bake another 5 minutes uncovered.
