Mother’s Day Dinner

This is the dinner I am making for mom today:

Roast (beef) is in the crockpot with fresh garlic, fresh parsley, salt and pepper. On High - it will be done in 4 - 5 hours; gravy; mashed potatoes with buttermilk and sour cream, salt and pepper; whole kernel corn with butter, salt and pepper.

Hot rolls - self-rising flour, milk, sugar, mayo - bake 350* F. 12 - 15 minutes

Dessert (this is one of her favorites):

apple crumb tarts

shortbread crusts
1 3/4 sticks butter, cut into 1-tablespoon pieces
2 1/2 cups flour
2/3 cup packed light brown sugar
1/2 teaspoon salt

press into bottom and up sides of 2 9-inch tart pans - bake 20 minutes - fill -

peeled sliced apples, lemon juice, cinnamon, sugar - toss and fill tart shells - bread crumbs with melted butter to sprinkle on top - sprinkle sugar on top of the crumbs

bake 1 hour

Baked the apple crumb tarts and they were so good, and easy. Shared one with a friend.
