Kitchen Witch’s Country Fried Chicken recipe:

In a large bowl, combine and whisk:
4 cups flour
1/2 cup paprika
4 Tbsp. salt - I use Kosher
4 Tbsp. pepper - fresh ground
2 Tbsp. ground mustard
2 Tbsp. dried thyme
2 tsp. ground ginger
1 tsp. dried oregano
2 tsp. garlic powder

Store in a cool dry place. Will store for 1 year.

When ready to use:

3/4 cup “mix”
2 eggs
1/2 cup milk
1 broiler/fryer chicken (3 to 3 1/2 pounds) cut up
vegetable oil

Place mix in large resealable splastic bag.

Beat eggs and milk in a shallow dish.

Dip chicken pieces in egg mixture; place in bag and shake to coat.

In a large skillet, heat 1/2 in. of oil over medium-high heat.

Brown chicken on all sides, remove to a greased 13x9x2 in. baking pan.
Bake, uncovered at 350 degrees for 50 to 60 minutes or until juices run clear.

Yield: 4 servings.

VARIATIONS: Why not try this with beef slices or chops.

In answer to the PM - yes I do put cloves of garlic in the oil when I am browning the chicken - that is my preference - you don’t have to.
