Mozzarella Marinara Chicken
2 tablespoons extra-virgin olive oil
1 pound chicken breasts, pounded to even thinness
3/4 cup marinara sauce
1/2 cup shredded mozzarella
3 tablespoons grated fresh Parmesan cheese
Preheat oven to 500 degrees.
In a large ovenproof skillet over medium-high heat, add olive oil. Add
chicken and turn to coat both sides with oil. Brown chicken for 3 to 5
minutes per side. Spoon marinara sauce over chicken pieces and sprinkle
evenly with mozzarella then Parmesan.
Place skillet in oven until cheese melts and chicken is thoroughly cooked,
about 5 to 10 minutes.
