Mulligatawny

  • 1 1/2 lbs lamb stew meat – diced
  • 4 tablespoons butter
  • 1 onion – minced
  • 1 tablespoon curry powder
  • 2 tablespoons flour
  • 1/3 cup lentils
  • 2 tart apples – peeled & diced
  • 1 bell pepper – diced
  • 2 carrots – diced
  • 1 teaspoon sugar
  • 1/2 teaspoon ground mace
  • 1/4 teaspoon ground cloves
  • salt and pepper – to taste
  • 1 cup coconut milk

Brown the meat in butter in a skillet. Add onion, curry powder and flour and cook and stir for 2 minutes. Combine with remaining ingredients, except coconut milk, and 2 quarts of water in the crockpot. Cover and cook on low 8 to 10 hours. Add coconut milk, heat through, and serve with rice.
