MUSHROOMS STUFFED WITH SPINACH, GRUYERE AND WALNUTS
Serves 8 to 10
12 to 16 mushrooms caps, cleaned and dried
2 tbsp. vegetable oil
1 package, frozen chopped spinach and squeezed dry
1 medium shallot, minced
1 tsp. minced garlic
1/4 cup finely chopped walnuts
salt and pepper
1/4 cup, shredded Gruyere cheese
- Place the oil, shallots, spinach and garlic in a saute pan over medium heat and saute until tender. Remove and cool until room temperature.
- Mix the walnuts into the spinach mixture, add olive oil until moist and season… Spoon enough of the spinach mixture into each mushroom cap and top with some Gruyere cheese.
- Bake for 15 minutes, remove and allow to cool slightly and serve.
