MUSHROOMS STUFFED WITH SPINACH, GRUYERE AND WALNUTS

MUSHROOMS STUFFED WITH SPINACH, GRUYERE AND WALNUTS
Serves 8 to 10

12 to 16 mushrooms caps, cleaned and dried
2 tbsp. vegetable oil
1 package, frozen chopped spinach and squeezed dry
1 medium shallot, minced
1 tsp. minced garlic
1/4 cup finely chopped walnuts
salt and pepper
1/4 cup, shredded Gruyere cheese

  1. Place the oil, shallots, spinach and garlic in a saute pan over medium heat and saute until tender. Remove and cool until room temperature.
  2. Mix the walnuts into the spinach mixture, add olive oil until moist and season… Spoon enough of the spinach mixture into each mushroom cap and top with some Gruyere cheese.
  3. Bake for 15 minutes, remove and allow to cool slightly and serve.
