Mustard Glazed Pork Loin Roast

2 - 4lb boneless pork loin roasts, trimmed of fat
salt and pepper to taste
1/2 C. Dijon mustard
1/4 C. fresh orange juice
2 T. honey
2 tsp. grated orange zest
1/2 tsp. ground cinnamon
1/4 tsp. ground allspice

Preheat oven to 400

Sprinkle the pork with salt and pepper. Place it on two racks in two shallow roasting pans. Roast for about 1 hour.

Combine remaining ingredients. Brush the glaze over the pork roasts and continue to roast for another 30 to 40 minutes. Remove from the oven and allow the pork to stand for 10 minutes before serving.
