Does anyone have a recipe for meatloaf that contains mustard but not ketchup or any tomato product? I also remember it having crackers as the binder. Thanks for the help
Buttermilk Meat Balls - can be made as a meatloaf
1 lb. ground beef
3/4 cup milk
3/4 cup bread crumbs (fine)
1/4 cup finely chopped onion
1 tsp. salt
1/2 tsp. salt
1/4 tsp. black pepper
1/4 cup butter
2 Tbsp. butter
2 Tbsp. flour
2 tsp. sugar
2 cups buttermilk
2 Tbsp. mustard
Combine the beef, milk, bread crumbs, onion, 1 tsp. of salt, and the pepper. Mix thoroughly then shape into 16 balls. Melt 2 Tbsp. butter in a skillet then brown the meat balls well on all sides. Remove the meat balls from the pan and add the remaining butter. Blend in the flour, sugar, and the other 1/2 tsp. of salt. Add the buttermilk and mustard and cook, stirring constantly until thickened. Reduce the heat and return the meat balls to the sauce. Cover and simmer for 25 minutes. Serve over rice or noodles. Or make a meatloaf and pour sauce over during last half hour of cooking.
Beef Patties - mixture can be used as a meatloaf
1 1/2 pounds ground beef
1 can cream of mushroom soup
1 tablespoon mustard
2 teaspoons Worcestershire sauce
1 teaspoon horseradish
1/4 cup dried bread crumbs
1 medium onion, finely chopped
1/2 teaspoon salt
dash of pepper
Mix soup, mustard, Worcestershire sauce and horseradish together and set aside.
Lightly beat egg, add bread crumbs, onion, salt, pepper and 1/4 cup of the soup mixture. Add beef, mix well. Shape into 6 patties, brown in a skillet.
Pour remaining soup mixture over patties; cover and cook on low heat about 20 minutes.
Honey Mustard Meatloaf
1-1/2 pounds lean ground meat
1/3 cup dry bread crumbs
1/2 cup chopped onion
1 teaspoon basil leaves
1/2 teaspoon salt
1/4 teaspoon pepper
3 tablespoons Dijon style mustard
3 tablespoons honey
2 tablespoons green onions, chopped
Preheat oven to 350. Combine ground meat, bread crumbs, onions, basil, salt, and pepper. Stir in eggs, mixing lightly, but thoroughly.
Shape into loaf. Place loaf in baking pan, or on a baking sheet (with sides). Combine honey and mustard, brush half of the mixture on
loaf. Bake uncovered for 30 minutes. Brush with remaining honey and mustard mixture. Bake for 20 to 30 more minutes. Remove from
oven, sprinkle chopped green onion. Serves 6 to 8.
2 pounds lean ground pork
1/2 cup applesauce
1/2 cup dry bread crumbs
1 (1-ounce) envelope dry onion soup mix
2 tablespoons Dijon-style mustard
Black pepper, to taste
- In large mixing bowl, blend together ground pork, applesauce, breadcrumbs, onion soup mix, Dijon-style mustard and black pepper to taste.
- Turn mixture into loaf pan and bake in 375Âº F oven for 1 hour 15 minutes, until meat thermometer inserted reads 160Âº F.
- Let loaf rest 10 minutes before slicing to serve.
Serves 4 to 5, with leftovers
Optional: Top meat loaf with brown sugar and 2 to 3 slices bacon 30 minutes before done.
