My 1st post: Southwestern Bean & Beef Chili for the slow cooker

Hi there!
My girlfriends call me the Crockpot Queen since I use it 3-4 times a week because of my kids having practice from 3-7pm. This is one of our family favorites & I had to share.

Southwestern Bean & Beef Chili

1 onion, diced
4 cloves of garlic, minced
1 - 1.5 lbs ground beef or pork
1 15 oz can tomato sauce
1 15 oz can (rinsed & drained) of: garbanzo beans, red kidney beans, black beans & corn
1 15 oz can of rotel tomatoes and chiles, undrained
2 medium red bell peppers, chopped
1 C chicken broth
3 T. chili powder
1 T of cocoa powder
1 tsp ground cumin (more if you like it)
1/2 tsp salt

Sautee onion and ground beef of med-high heat. Once nearly done, add garlic & sautee for last minute. Drain grease, then pour into crockpot with all other ingredients. Cook on low 7-10 hours. Reseason right before serving if it needs salt, pepper or more cumin. Serve with shredded cheese, black olives, avocado, sliced green onions, & corn bread.
