My favorite Oatmeal Chocolate Chip Cookie

Royal Oatmeal Chocolate Chip Cookies

1 stick good quality butter, cold, set out 15 min. prior to making cookies
1/2 cup granulated sugar
1/2 cup DARK brown sugar
1/2 tsp. real vanilla extract
1/2 tsp. baking soda
1/4 tsp. salt
1 large or extra-large egg
3/4 cup all-purpose flour
1-1/2 cups old-fashioned rolled oats(or1 minute quick-cook oats)
1 cup good quality semi-sweet chocolate chips

Preheat oven to 375 degrees.

Beat butter, sugars and vanilla until combined. Sprinkle salt and baking soda over mixture and beat to combine. Add egg and beat to combine. Add flour and beat on low just until combined. Add rolled oats and beat on low just until combined. Add chocolate chips and beat on low until combined. Do not overbeat mixture . . . just until items are combined.

On a baking sheet lined with parchment or non-stick baking sheet, place rounded balls of dough the size of ping-pong balls on baking sheet, about 3" apart. Bake until JUST set and side edges just begin to brown, about 8-9 minutes. Do not overbake. Let cool for about 5 min. on baking sheet, then remove to a cooling rack. Enjoy.

Note: Cookies should end up 3" in diameter. Chilling the dough balls for 1 hour will give better results. You can also reshape them as soon as they come out of the oven by using a table knife to push the edges back into the 3" circle.
