Slice up about 5 pounds of potatoes (I sliced them thin but not wafer thin). Slice up your ham (1-1 1/2 pounds) into at least 1-2 inch pieces.
1/4 cup chopped onion
1/4 cup butter
1/4 cup flour
1-2 teaspoons salt (not quite 2)
pepper to your liking (I like pepper)
2 1/2 cups milk
3 cups shredded mild cheddar cheese
Once sauted, (wisk flour and milk together first, add salt & pepper & add to onion mixture)
Cook & stir until it thickens. (If you think mixture is too thick, add a little more milk). Put shredded cheese into mixture. Stir until melted and smooth. Take off heat. Put potato slices right into cheese mixture and coat the potatoes. Grease (crisco) a 13X9 baking pan. Layer cheesy potatoes then ham, then top it with rest of potatoes. Don’t cover. Bake at 375 degrees for about an hour and a half. Let sit for at least 10 minutes. I combined 2 recipes and worked out the kinks & it’s a favorite in my family.
