Nachos Party Time

Nacho’s Party Time
Makes 1 Huge plate.

1 16-ounce can refried beans. . your choice
1/2 cup reduced-fat or regular sour cream
3/4 cup of your salsa or bottled salsa
1 cup shredded Cheddar Cheese or Mexican Blend cheese
1 can of Black Olives. . . chopped
2 Roma Tomatos . . . diced
2-3 Green onions and stems…chopped
1 T. chopped fresh cilantro, plus more for garnish
A few big handfuls of Tostito Restraunant Style tortilla chips

Large spoon spread beans out in a ring on a large microwave-safe dinner plate, leaving clear about 4 inches in the center of the plate.

Chips will be placed in the center.

Put sour cream, salsa, and chopped back olives over the beans. Sprinkle about half of the cheese and then the cilantro over everything.

As you build up the layers, be sure to leave the space in the center of the plate empty.

Microwave on high for 2 minutes. Remove the plate from the microwave.

Place chips in the center of the plate.

Sprinkle the remaining cheese over the chips.

Return the plate to the microwave and heat again on high for 1 minute, until the cheese has melted.

Use a pot holder to take the plate out of the oven; it will be hot.

Place chopped Roma tomatos, chopped green onions and stems on the top of the heated layers… . . . Add a little chopped cilrantros.

Can add some fresh chopped jalapeno’s . . .no seeds if you like
