An easy chicken casserole with broccoli and Parmesan cheese.
INGREDIENTS:
* 1 can cream of mushroom soup, undiluted (reduced fat)
* 1/4 cup half and half
* 1 1/2 to 2 cups cooked, cubed chicken
* 2 tablespoons melted butter
* 1 tablespoon sherry or white wine, optional
* 1/8 teaspoon ground nutmeg
* 1 package (10 ounces) frozen broccoli spears, cooked and drained
* grated Parmesan cheese
PREPARATION:
Combine soup, half and half, chicken, butter, sherry and nutmeg. Arrange broccoli an a shallow casserole; top with chicken mixture. Sprinkle with Parmesan cheese. Bake at 450° for 20 to 25 minutes, until hot and bubbly.
Serves 4.
I always make this recipe without measuring, so this can be altered to your liking when you make it. You can also add some lemon juice to the mixture before the breadcrumbs - I found that it gives a nice tang, but can sometimes slightly curdle the mayo/soup mixture!
2 cans - (choose from the following, you can mix and match)
Cream of Broccoli, Cream of Celery, Cream of Chicken,
Cream of Mushroom soup
1 Cup Light Mayo
2 Cups Chicken, cooked and cubed
2 Cups Brocolli, cut into florets
Breadcrumbs
Shredded Cheese
Set oven at 400 F.
Mix soup and mayo in a large casserole dish. Add chicken and brocolli; toss until evenly covered.
Top with thin layer of breadcrumbs, followed by shredded cheese to cover, and one more thin layer of breadcrumbs.
Bake covered for 30 min., or until sides are bubbling. Remove cover and bake until cheese is nicely melted - or broil quickly at the last minute.

is one I’ve been using since 1976. A big hit at potlucks too.
6 chicken breasts, cooked and chopped into bite size pieces.
2 bunches of broccoli, cooked slightly.
2 cans cream of chicken soup
1 cup mayonnaise
1/2 tsp curry powder
grated cheddar cheese
bread crumbs
paprika
Layer broccoli in greased large baking dish.
Spread chicken over broccoli. Combine soup, mayonnaise
and curry powder and spread over chicken. Add a generous
layer of shredded sheese and sprinkle with bread crumbs and
paparika. Cover and bake at 350 for 45 - 60 minutes; uncover
last 15 minutes to brown top.
This isn’t a casserole, however its quick and easy.
1 small onion, chopped
1 14-1/2oz can of chicken broth
2 cups chopped cooked chicken or turkey
2 cups Minute rice, uncooked
2 cups frozen broccoli florets, thawed
1 cup shredded cheddar cheese
Cook onion in a large skillet coated with cooking spray over medium
heat until onion is tender, about 5 minutes.
Add broth and chopped chicken or turkey. Stir in 1/4 cup of water and bring to a boil. Reduce heat to medium-low.
Stir in rice and broccoli. Cover and simmer for 5 minutes until broccoli is crisp tender. Top with cheese and remove from heat. Let stand covered for 5 minutes or until rice is tender and cheese is melted.
Makes 4 servings.

THROW ALL IN PAN AND MIX,COVER WITH BREAD CRUMBS
