1 c. flour
1 tbsp. salt
Pinch of pepper
3/4 c. cold water
1/4 tsp. baking powder
Combine flour, salt, pepper, and water. Mix until smooth. Cover and let stand 20-30 minutes. Pat fish dry with paper towels. Stir baking powder into mixture. Dip fish into batter allowing excess batter to drip off. Fry fish 5 to 6 minutes in deep fryer at 375 degrees.

here is the cheater method that i have used and is VERY close to long john silvers recipe.

2 boxes of drakes mix (small)

take one box and mix with 1/4 of warm flat beer and then add water until the thickness of pancake batter, not too runny.

the other box will stay dry and put in cake pan.

take the fish or whatever you wish to batter and dip in the wet mix and then dip in the dry mix and put into fryer. If you would like it thicker, do the dipping process twice.

With fish, make sure you pat it dry first or the wet mix will slide right off.
This is very messy but very much worth it!!
