New Recipe - GRANDMA JENNIE'S NEIGHBOR'S MANDELBROT

Here’s my first contribution. It’s a delicious recipe for Mandelbrot I got over 30 years ago from my mother-in-law’s friend. She was over 70 at the time but still was a marvelous cook. Enjoy!

GRANDMA JENNIE’S NEIGHBOR’S MANDELBROT - THE ONE WHO ALWAYS WORE HOUSECOATS AND FUZZY PINK SLIPPERS

3 cups flour
1/2 tsp salt
2 1/2 teaspoon baking powder

Mix together in bowl.

In another bowl mix:
3 eggs
1 cup sugar
1 cup vegetable oil
1/2 tsp (full) vanilla
1 tsp (full) almond extract
2 t bottled grated orange rind

beat eggs - mix in sugar - then oil - flavorings and rind
add flour mixture

mix in:
1 cup lightly toasted almond slivers

chill dough for a few minutes if it loses shape too easily

divide dough in half

on baking sheet, shape into loaves about 1 inch high
keep loaves as far apart as possible

bake 26-30 minutes
make sure middles are baked - check by cutting a loaf in half after 26-27 min - cook a few more minutes if necessary

cool a few minutes

cut in 1 inch slices

handle dough gently - it’s fragile but lovely and flaky

places slices on sides on baking pan - use spatula to handle slices

bake 20 minutes more at 300 degrees ‘til light brown

This looks like a wonderful cookie. I will have to try it soon. I think I would use fresh orange rind, though. Thanks for sharing.

This is my most favorite German Christmas cooki. In Germany only time you can buy this freshly made is during Chris Kindel Market during the months of November and December. Best time ever. Those cooki’s however have many more ingredients and spices then in this cooki recipe. I am going to translate the original recipe from German to english and post it here for everyone to enjoy.
