No Bake Eskimo Cookies

• 3/4 cup butter or margarine
• 3/4 cup sugar
• 1 tablespoon water
• 3 tablespoons cocoa
• 2 cups quick-cooking oatmeal
• 1 1/2 teaspoon vanilla
• 1/3 cup powdered sugar

  1. Place softened butter or margarine in medium size mixing.

  2. Add sugar and cream (or blend) with a wooden spoon until smooth and creamy.

  3. Add water, cocoa and oatmeal and mix well.

  4. Cover with plastic wrap and chill in refrigerator for 2-3 hours.

  5. Pour powdered sugar into a small dish.

  6. To form the cookies, use a teaspoon and cut off small pieces of dough (about size of walnut) and shape into balls.

  7. Roll balls in powdered sugar. Store cookies in covered container in refrigerator.
