NO KNEAD, NO FAT LOAF

1 pkg. active dry yeast
1/4 c. warm water
1 tsp. sugar
1 tsp. salt
1 c. skim milk
*1 1/4 c. white flour
*1 c. whole wheat flour
*1/4 c. oat bran
1/4 tsp. baking soda
Cornmeal

Mix yeast with warm water and sugar, let stand for 5 minutes. When yeast is softened, add salt and milk. Stir in 1 cup of flour to which the baking soda has been added. Beat well for 2 minutes. Stir in rest of flour to make stiff batter. into 4x8 inch loaf pan that has been sprinkled with cooking spray and sprinkled with cornmeal. Sprinkle top with cornmeal. Cover. Let rise in warm place for 45 minutes or until doubled.

Bake at 400 degrees for 25 minutes. Per loaf: 1100 calories, 4 grams fat.

*May use 2 1/2 cups white flour.
