Not Just Another Zucchini Bread Recipe

3 eggs, slightly beaten
1 tsp. vanilla
1 c. oil
3 c. flour
1 1/2 tsp. baking powder
1/2 tsp. salt
1/2 to 1 c. chopped nuts, toasted ( I use pecans )
1 tsp. baking soda
1 to 2 tsp. cinnamon
2 c. white sugar
1/2 tsp. nutmeg
2 c. shredded zucchini

  1. Combine the eggs, vanilla and oil; set aside.
  2. Combine all of the dry ingredients, including the nuts.
  3. Add the zucchini and mix well.
  4. Pour into loaf pan(s) 1 large or 2 small
  5. Bake on center rack of oven at 350 degrees for 1 hour or until toothpick
    inserted in the center comes out clean.

Don’t panic…this batter will be very thick, but it’s supposed to be!
