Nugget Market Chocolate Chip Cookies

1 cup Brown sugar
1 cup Granulated sugar
1 cup shortening
1 1/2 teaspoons Baking soda
1 teaspoon Salt
1 1/4 teaspoons Cream of tartar
1/4 cup Water
1 teaspoon vanilla extract
2 eggs
3 1/2 cups All purpose flour
2/3 cup Chocolate chips
Preheat oven to 375° F.
In a mixing bowl, add the brown sugar, granulated sugar, shortening,
baking soda, salt, cream of tartar, water and vanilla extract.
Mix well.
Add the eggs and cream for 2 minutes on medium speed.
Scrape the bowl. Mix until sugar is dissolved
Add all of the flour and mix until blended. Scrape bowl.
Add the chocolate chips. Mix until evenly distributed.
Drop by rounded tablespoonfuls onto ungreased baking sheets.
Bake for 9 to 11 minutes or until golden brown.
Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Blend the above ingredients
9 Lbs. Whole eggs
Add the eggs and cream for 2 minutes at 3rd speed.
Scrape the bowl. Mix until sugar is dissolved
40 Lbs. All purpose flour
16 Lbs. Chocolate chips
Add all of the flour and mix until blended. Scrape bowl.
Add the chocolate chips. Mix until blended
