Nut Bon Bon Cookies
1 lb. butter
5 tsp. Sugar
5 egg yolks, beaten
1 tsp. Vanilla
1 cup sour cream
5 cups flour, sifted before measuring Powdered sugar (approx. 1 cup)
1-lb. dates, cut up
1 cup water
2 cup chopped walnuts
Cream butter and sugar. Mix in eggs yolks, vanilla, and sour cream.
Stir in flour (dough will be sticky). Form in 5 balls,
wrap in wax paper and refrigerate several hours or overnight. Make
filling by cooking dates and water until thick. Add chopped nuts
and cool. Roll dough out on board dusted with confectioners’ sugar.
Cut into 2-inch squares with pastry cutter. Fill with 1-2 tsp. date/nut filling. Fold dough over filling and place cookie; seam down on ungreased baking pan. Bake in 350 degree oven for 12-15 minutes.
Can dust with additional confectioner’s sugar.
