Nuthin’ Muffins
1 pound sausage or crumbled bacon
6 eggs – separated
1 c. Hodgson Soy Flour
1-teaspoon baking powder
1 tsp. black pepper
1/2 cup mayonnaise
1/2 cottage cheese, or sour cream
1/4-cup cream or half and half
4 oz Provolone or shredded cheddar cheese

Preheat oven to 375. Pam spray muffin tin or use liners.
Crumble and cook sausage or bacon drain. Separate 6 eggs. Beat yolks add soy flour, half and half or cream, baking powder, pepper, mayonnaise, cottage cheese and cheese. Blend with a spoon. It will seem kind of stiff. Add sausage or bacon.

Now, beat the egg whites until stiff. Gently fold whites into the batter after lightening batter first with some of the whites. Spoon into muffin tins and bake for about 30 mins.
