Nutty Zucchini Bread with Lemon

Ingredients

  • 1/2 cup butter, softened
  • 1 cup brown sugar
  • 2 eggs
  • 1 1/2 cups of grated Zucchini
  • 1/2 teaspoon lemon extract
  • 2 cups all-purpose flour
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup chopped pecans

Directions

  1. Preheat oven to 350 degrees F (175 degrees C). Lightly grease a 9x5 inch loaf pan.
  2. In a large bowl, cream together the butter and sugar until light and fluffy. Stir in the eggs one at a time, beating well with each addition. Stir in the zucchini. In a separate bowl, sift together flour, baking powder, and salt.
  3. Blend the Zucchini mixture into the flour mixture; stir just to combine. Fold in walnuts. Pour batter into prepared pan.
  4. Bake in preheated oven for 1 hour

This bread has an interesting blend of flavours.
