Oatmeal-Carrot Cookies

3/4 cup butter
1 3/4 cup flour
3/4 cup brown sugar, packed
1 egg
1 teas. baking powder
1/2 tsp. cinnamon
1/4 tsp. baking soda
1/4 tsp. ground cloves
1 tsp. vanilla
2 cups oatmeal
1 cup carrots, finely shredded
1/2 cup raisins

In bowl, beat butter with electric mixer for 30 seconds or until soft. Add about 1/2 of the flour, brown sugar, sugar, egg, baking powder, cinnamon, baking soda, cloves and vanilla. Beat until combined, scraping sides of bowl. Beat or stir in remaining flour. Stir in oats, carrots and raisins. Drop dough by rounded teaspoons 2 inches apart onto ungreased cookie sheets. Bake until edges are golden. Cool on wire rack. 79 calories per cookie.
