Oatmeal Raisin Cookie Recipe like Paradise Bakery

Does anyone have an oatmeal raisin cookie recipe that is crispy on the outside, but chewy on the inside like the ones at Paradise Bakery? They are not cake-like at all, and are fairly flat. I’ve been able to reproduce the flavor, but not the texture. I’ve decreased the amount of soda a bit, also used only egg yolk instead of whole egg, used honey, used more white than brown sugar in attempts to get chewy insides, and the “crispy” part totally eludes me. I assume that Paradise uses McCann’s oatmeal (or some other steel cut brand) since they use Irish Steel Cut Oatmeal for their breakfast menu that is served in their Oatmeal Raisin Cookie Bowl. That part worked out OK I think, but I can’t get the chewiness quite right and I haven’t gotten any crispiness at all yet. So if anyone has any ideas or a recipe, I’d be eternally grateful!
