Very crunchy and good we have these for a party treat. They are especially good with a cup of coffee in the mornings.
1 cup butter
1 cup sugar
3 cups all-purpose flour, measured after sifting
4-1/2 tsp. ground cinnamon
1 large egg separated
1 tsp. pure vanilla extract
1 cup finely chopped pecans
Preheat oven to 350*F.
Cream butter and sugar. combine flour and cinnamon and gradually add to the creamed mixture. Add egg yolk and vanilla. The mixture will be very thick. Spread batter on a buttered cookie sheet and pat down until about 1/4 in. thick. Brush top of mixture with unbeaten egg white then press chopped pecans down into dough. Bake for 30 minutes. Watch carefully as this will burn easily. Cut into oblong pieces or into sticks while hot.
