Olive Garden Tuscana Soup

3/4 c onions, diced
1 slice Pancetta, diced
1 1/4 tsp garlic cloves, minced
1 pkg Chicken broth or 1 chicken bouillon cube
1 qt water
2 med potatoes, halved lengthwise & cut into slices (I use large red potatoes)
2 c Cavallo or kale, halved & sliced into 1/16" strips
1 1/2 c spicy sausage links, halved & sliced diagonally 1/2"
1/3 c heavy whipping cream

Place sausage link onto sheet pan & bake at 300° for 15-20 minutes or until done. Place onions & Pancetta into 4 quart sauce pan & cook over medium heat until onions are almost clear. Add garlic & cook 1 more minute. Add chicken broth, water & potatoes, bring to a simmer for 15 minutes. Add remaining ingredients & simmer for an additional 5 minutes. Serve hot.
