ONION PARMESAN TOASTS (restaurant recipe)

Yields 14 toasts

3/4 cup finely chopped sweet onion
½ cup mayonnaise
14 slices crostini
1/4 cup grated Parmesan cheese
black pepper

  1. Preheat broiler.

  2. Stir together the onion and mayonnaise in a small bowl. Smear each toast evenly with the onion mixture and sprinkle with cheese and pepper to taste.

  3. Broil until topping is bubbling and lightly browned, 1 to 2 minutes (do not burn). Serve warm.
