Oo-la-la Summer Dessert from the Holly Hill Homestead in Hughes Springs, Texas
The best “crummy” dessert you’ll ever have! Crumb crust and crumb topping with a vanilla pudding filling that is topped with fresh fruits of your choice, whipped topping and studded with more crumbs. So many variations are possible - any pudding, any fruits, chocolate chips, anything you choose - the list is endless.
2 c. flour
1/2 c. brown sugar
1 c. butter
1 c. fine chopped pecans
1 small pkg. vanilla instant pudding
1 3/4 c. milk
3-4 c. sliced fresh fruit (peaches, blueberries, strawberries)
1 container whipped topping
Prepare crumb crust by pulsing first four ingredients in a food processor or mixing with a pastry blender until mixture resembles small peas. Press onto a baking sheet and bake at 350 degrees until golden. Let cool and crumble, reserve 1 c. of crumbs and press remaining crumbs into a 9X13 dish.
Whisk together pudding and milk, let stand while you are slicing the fruit. When it starts to thicken, spread over crumbs, top with fruit, then whipped topping. Sprinkle reserved crumbs over top. Adding extra toasted pecans to the top makes it extra special.
Chill and enjoy. Serves 12
