Orzo Stuffed Peppers

Stuffed Peppers with Orzo

4 long, chipotle, poblano or chile peppers
8 - 12oz. Chorizo Sausage
1+ tablespoon olive oil
1 clove garlic, chopped
10 oz. washed spinach, stems removed & chopped
1 cup chicken broth
2/3 cup Orzo
1 cup stewed tomatoes
2 cups shredded Monterey Jack or pepper jack cheese

Preheat a griddle or grill pan. Cut peppers in half length-
wise & de-seed. Drizzle peppers with a little olive oil &
grill over med-high heat 3-4 mins on each side, until tender. Transfer peppers, hollow side up, to a foil lined baking
sheet. Heat a skillet on the stove top on med & add 1T. of
olive oil & garlic. Add chorizo sausage. When sausage is
done, (drain if necessary), stir in stewed tomatoes & add
spinach in bunches until it is all wilted Season with salt &
pepper. Stir in Orzo & chicken broth. Bring to a boil then
reduce heat & cover & simmer about 7-8 mins until Orzo is
tender. When done, fill peppers with meat
mixture. Bake @375 for 15-20 mins. Remove from oven
& top each pepper with cheese & bake an
additional minute or so until cheese is melted.
