Oysters Bienville Microwaved

3 T. butter
1 1/2 T. flour
3 T. milk
5 or 6 mushrooms…chopped
1/3 cup chopped shrimp
1 T. chopped parsley
2 T. chopped onion
1 T. Vermouth or dry white wine
1/8 tsp. thyme
1 T. grated Parmesan cheese
Pinch cayenne
3 egg yolks

1 dozen oysters in the half shell. Put the butter in a 2 quart bowl and microwave on High for 45 seconds or until melted. Stir in the flour. Add the milk and stir well. Microwave for another minute, or until thickend. Add the chopped mushrooms, shrimp, parsley, onions, wine, thyme, Parmesan and cayenne. Mix well. Cover with plastic wrap and microwave for 45 seconds to a minute, or until warmed through. Test with your finger. Beat in the egg yolks.

Place the oystes in their shell on a dish, just big enough to hold the 12 oysters.
Spoon the sauce over the oysters. Microwave on High for 4 minutes or until heated through.

Serve hot. It will serve 4 as appetizers and 2 as main course, unless you’re real hungry.
