panko/pecan coated cod

i love to bake fish coated in panko and seasonings. i don’t know where i heard or flashed on pecans in the breading, but i must have seen or heard it somewhere, but never actually read a recipe. so tonight i am adding ground pecans to the panko crumbs, lemon dill weed, onioin and garlic powder, and a little flour, like 1/2 tsp.

beat an egg, dip your pieces of fish in egg and then place in bowl with above ingredients and coat. then cook in oven for 35-40 minutes at 375. cod is a firm fish and the fish i bought is perfect thickness. sometimes when you buy fish it’s thin, so you wouldn’t cook that as long. i will serve asparagus and rice cooked with a little lemon in the water. i am also going to try the brown bread recipe i found today on this site! yippeeee! i love to cook! hope my family likes it! they always let me know. i’ll let you know!

Oh, sometimes i lightly salt the fish and let it sit before I dip it. but most of the time i forget to and no one seems to notice!

nicky7, thanks for the cod recipe. I also like coating things with panko crumbs, they stay more crisp & taste better. Never thought about using the nuts with the crumbs but will definitely do so. Cod is a great fish to work with, fool proof & tastes good. Thanks!

Nicky7, I have made the pecan and panko coated cod. Like you, I don`t remember where I saw the recipe but it is a keeper. We all loved it.
