Parmesan Zucchini Gratin recipe
2 medium zucchini, sliced into very thin rounds
3 cloves garlic, minced
2 tablespoons olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper
1/2 teaspoon dried thyme leaves
1 tomato, chopped
1/2 cup breadcrumbs
1/2 cup freshly grated Parmesan cheese
Preheat oven to 375°F.
In a large bowl, toss together zucchini, garlic, oil, salt, pepper, and thyme. Arrange in a lightly greased 2-quart shallow baking dish. Evenly distribute tomatoes over zucchini.
In a small bowl, combine breadcrumbs and cheese. Sprinkle evenly over tomatoes to coat the surface of the baking dish. Bake in oven until browned and bubbling, 35 to 45 minutes. Cool 15 minutes and serve warm.
