Pasta Parmesan with Salmon

You have heard me talk about meatless Fridays in my house. Here is another meatless dish that I’ve come up with in a pinch that does not take long to prepare and it doesn’t have to be Friday to enjoy it!

Pasta Parmesan with Salmon

Heat 3/4 stick of butter or margarine in skillet; add 1/2 c. chopped onion and saute for 5 minutes with 1 minced clove of garlic.

Stir in 1 c. tomatoes - fresh, chopped or canned, diced; bring to simmer and simmer for 5 minutes.

Add 1 small can salmon (drained - 7 1/2 oz.), 2 T. basil, a few turns of the pepper grinder.

Meanwhile cook 2 c. medium-sized shell macaroni in boiling salted water al dente and drain. Transfer to serving dish. Pour salmon sauce over the top/ toss gently. Sprinkle with grated Parmesan cheese.
